For almost a century, York has been the headquarters for the globally renowned KitKat chocolate bar.
Initially introduced in 1935 as Rowntree’s Chocolate Crisp, this beloved treat has been manufactured in the historic city ever since.
Today, Nestlé owns the York factory, which serves as the hub for KitKat production not only in the UK but also for international markets.
Behind the scenes, a dedicated team of experts continuously innovates and enhances the product to meet contemporary demands while preserving its timeless flavor cherished by generations.
Working on the production of one of the UK’s favorite chocolate bars is a dream job for many, and for Rob Jackson, a product and process specialist at Nestlé focusing on KitKat, it is a reality.
Rob ventured into the confectionery industry eight years ago with a background in forensic anthropology and teaching experience rather than a culinary one.
“I sought the chance to work in a practical industrial setting that applied real-world science,” he stated.
“When Nestlé advertised a lab technician role at its global confectionery R&D center in York, I saw it as a fantastic opportunity.”
Since joining Nestlé, Rob has transitioned through various departments, from the laboratory and healthy snacking division to the KitKat team at the Product Technology Centre, and currently, he holds a diverse role in the factory itself.
Rob and his team are consistently refining and enhancing the product. “There is always something new happening, even with our core products,” he remarked.
“Whether it involves testing a new ingredient, making minor adjustments to a recipe, or implementing changes in our manufacturing process and adopting new technologies to enhance efficiency and reduce carbon emissions, innovation is constant.”
Rob highlighted, “My current focus is on sustainability – aiming to minimize carbon emissions from our operations and supply chain.”
He teased, “Exciting new chocolate bars are in the pipeline, but I’m keeping that under wraps for now!”
When dealing with a well-known and beloved product like KitKat, maintaining high standards is crucial, and one way this is achieved is through an internal team of expert tasters.
“They are trained to identify subtle nuances and describe them objectively and scientifically,” Rob explained.
“Rather than personal preferences, they focus on descriptors like intense cocoa, biscuit, or milk flavors. We analyze this feedback to align with consumer preferences and make informed decisions.”
Not surprisingly, Rob is satisfied with the career path he has chosen.
“Even on the most challenging days – when things don’t go as planned or there’s a chocolate spill – I can always pause, look around, and realize the excitement of what I do. It’s truly enjoyable,” he reflected.
After nine decades, KitKat remains a symbol of York’s rich confectionery legacy, and with professionals like Rob, its future appears as promising as ever.
